Sourced from over 650 farmers living in Dembi, a village in Ethiopia. Ripe cherries are sorted and pulped, then fermented for 36 to 48 hours before washing. Depending on the local weather, the beans are dried for 10 to 12 days on raised beds and turned every 2 to 3 hours until moisture is reduced to 11.5 percent.
